Garden Fresh Zucchini Soup

Delicious served either hot or cold.


  • Serves 6
  • Ingredients:
  • 5 medium zucchini
  • 3 large carrots
  • 1 cup onion, chopped
  • 4 cups chicken stock or vegetable stock
  • 1 8-ounce package cream cheese
  • ½ teas salt
  • ¼ teas white pepper


    Cut zucchini and carrots into 1-inch slices. Combine with onion and chicken or vegetable stock in a large heavy pot. Cover and bring to a boil. Reduce heat and simmer until vegetables are tender-crisp, about 7 minutes.

    Place half of vegetable mixture and half of cream cheese in blender or processor and blend until smooth. Place the pureed mixture in a serving bowl. Repeat with remaining vegetables and cream cheese, add to soup in serving bowl. Stir in salt and white pepper.
